Some days ago i finished my 3 Phase Mot STACK... I used 6 of my biggest MOTs It's rectified to DC with 150 1N5408 diodes. I feed it with 400V 3Phase power.
I'm a little bit confused because I don't use any ballast and the 16A braker doesn't switch off But i can Arc as long as I want After a 1,5 min long permanent arc the smallest Mot get a little bit warm (40°C) The bigger ones are at roomtemp
And i just get 15-20cm arcs ...some people get over 40cm

I am thinking you phased them wrong. That'd be a simple fix, and it would be simple to make that mistake. I do that almost every time i hook MOTs up in series. Not because i don't know how it works, but because i don't pay attention, or i forget

try running 1 phase, if they are phased wrong, it should just make a tiny zapping noise, but if there phased right you will get an arc, then try the first phase with the second, then the second with the third until you get an arc.
Isn't there an insulation problem with 3 of these 6 MOTs ?
The 3 MOTs not beeing connected to ground with one of the connectors of the secondary will have a problem. The core of them should be connected to ground; otherwise the insulation between the prim coil and the core will be overstressed. And normally (in a microwave oven), one of connectors of the sec coil is connected with the core. But it must be removed from the core, and there will be a potential difference of about 2000 V between this connector and the core - this will probably be too much for safety.
