Which is better?
I'm going to build Dr. Kilovolt/Jan's Plasma speaker circuit (yes, another plasma speaker) which looks like the best performance and simplicity; I'm thinking of making a chamber with Helium for the arc but that might be too ambitious. For the "Better output" stage a gate transformer is used. I recall from one of the threads I found in my scearching (but then forgot) someone put a gate drive IC somewhere to get a cleaner wave form. So I'm wonder wwhich would be better.
Which one would give better sound quality? Do need a special setup up if I use an IC or just wire the I/O was in it's datasheet?

GDTs offer simplicity of design but must be optimized for a particular frequency. ICs require isolation, so you'd need a separate supply for each gate, whereas the separate windings of the GDT provide isolation.
