I want to get the difference of two voltages. I will power the op-amp with one voltage. Any op-amp best for this, or will the LM3900 suffice?

Common op amps I like to use are: TL071, TL072, LM358...

Pick the one that suits you best, depending on voltages.

It depends on the voltage and current you want.
If you just need low cost, low power op amp, try LM741,LM358....

You might already know of this circuit, but im posting it anyway. It just seems like a much better way of building a differential amp from an op-amp.

I was looking at several opamps and differential opamps at Digikey. Are there any with a single supply that will provide near 50v differential (IN1 - IN2) outputs. The ones I've looked at don't allow differences that high.

No op-amp can handle an input differential greater than its total supply voltage, and some are much worse than that. For instance, the NE5534 can only handle 0.7V differential. You probably want to rethink your approach to the problem: in general, no IC can handle a voltage outside of its supply rails.

(hint1: an op-amp is not a differential amp, it requires 4 resistors to make it one)
(hint2: differential amps can have gains less than 1)
