Hi, well I have a sensor signal (from a piezo cheesey ) which is actually just a Voltage spike. I want to feed that to a Bargraph driver, but that spike is to fast. How can I convert it in a way, so that the bar graph driver will be able to display it?

You'll need to sample and hold it, with a capacitor. You could use a buffer if you need more current to charge the cap up etc...

So feeding the signal into a OpAmp Buffer and then on a cap will do the trik?

Put a diode in series with the capacitor then the capacitor will be charged but not discharged and keep the voltage. Then you load the capacitor with whatever needed to decay with the time constant you want.

I think this OpAmp-Capacitor circuit is called "Integrating amplifier", you should google for that. Then you could add a high value bleeder reisistor with an appropriate time constant.
Just watch that if you signal is AC (I think it is), you need to rectify it so the integral is non-zero.

What type of capacitor would you use to hold the charge and why?
(Tantalum/ceramic?)

Or doesn't it matter?

If the 'spike' is much more than a diode drop (say 0.3V for a shotky)
then just a diode and a capacitor will do.
If the signal is small then you will need to amplify it
since it's a 'spike' you will need a fairly fast amplifier
can you estimate
- the amplitude of the 'spike'
- the duration of the 'spike'

Amplitude is in the 500mV (maximum) area. Duration should be some millisec.

I think an opamp would be the way to go for what your purposes are- i think that a capacitor will disharge too fast if you just try to charge it up ith the 500mV and use that to drive the chip for the bargraph.
