VHS tape is hard magnetic material. Once you magnetize it, it's difficult to make the magnetism go away, which is how it records things.
Transformer cores need to be soft iron, which is very easily magnetized and demagnetized, to stop them burning up from hysteresis losses. So I doubt tape would work too well. (Of course it would only take 10 minutes to bust a spool of tape out of an old VHS cassette, knock out the centre hub and wrap some wires round it to prove me wrong!)
Coilguns will work with any magnetic material because everything gets saturated to hell. If you tried to make an optimal non-saturating coilgun, you'd end up reinventing the linear motor.

On the external iron thing, what about using a iron filled epoxy like JB weld? chunk of JB weld is mildly ferromagnetic, and if you could pot a coil in it, would it make any difference?
