Ok. I searched through EVERYTHING, but I couldn't find any info on my questions.
1) Do the 2 caps need to be in parallel or series for resonance with one MOT? Do I need more than 2 MOCs? I only have 2.. 2) Do I need more ballasting for 2 MOC resonance?
I have 2 MOTS, (1x 1100 watt, 1x 680 watt), and 2 MOCS (1x 74uF 1x 76uF)

Hi, with 1 MOT, you want 2 parallel capacitors. You might find that the arcs are not stable, then connect the other MOT as an inductor (shorted secondary, and primary in series with the primary of your powered MOT), use the smaller one as an inductor.

One more question, is it possible to create Resonant with three MOC's in parallel?
Yes, it is possible to use up to four MOC's in parallel for one MOT but it will be smoking in seconds. It will go for maybe half a minute with three.
"And also, what would happen if connected three MOC's in series with a shorted MOT for ballast?" Where would you connect them, across secondary or primary of the ballast MOT? If primary then probably nothing, if secondary you would make smaller arcs.

Would these work then on 120V?
The first one will work, you can also remove the ballast MOT for more power as with 3 caps the arcs are usually stable.
The second one will not work (you need at least 2 SERIES caps with 2 MOTs, then you can parallel more of these strings to get 4,6 etc. caps.) With 2 MOTs the ballast one will ballast it too much, two parallel ballast MOTs would be needed.

Hmm, Another question: How do you connect the "other" terminal for arc drawing? It seems like it would be really hard to solder to the core of the MOT..

You can just use a screw or something to connect to the core. If you don't have a screw that fits, you can drill a hole into the metal plate and use a bolt or something.
