I have seen different sets of rules for the rating of the diodes and capacitors in a C-W multiplier. Up until now I have been using 2x the peak input voltage rating for my capacitors and diodes, but I have seen setups with the diodes rated at only the peak input voltage. Is this a good setup? It would save me a bit of $ with smaller diodes....

I would personally rate the diodes for 2x the expected voltage you would see across them, especially if the diodes are expensive high voltage types. If you are using cheap diodes, then you could probably relax this a bit.
Most importantly, understand what you are building and know what electrical stresses each component will "see." From here, you can intelligently select component values and ratings that meet your budget, and reliability requirements.
