If i hook up multiple capacitors (500v) in series to increase the voltage to say 5kv would there be a potential risk of the stored charged to arc between the leads?
It might sound like a dumb question but i don't want the capacitors to arc randomly if i charge them so its better to be on the safe side.

A string of 10 caps charged to 5KV will have 500V across each one, in the ideal world. In the real world you would need to use equalizing resistors to keep the voltage across each one about the same.
