I am making a rotary spark gap and i am using a 1200rpm brushless motor. i need 900rpm to achieve 120pbs to power my coil and i was wondering if i can control the speed with a variac because i have heard that you need a pwm to control the speed of a induction motor. Is this true? If it is what is the best way of controlling the speed of one?

It would likely be much easier to change the number of electrodes or find another motor. A variac can't be used to vary the speed with any accuracy. You would need to build a PWM inverter and synchronize that to the mains frequency to avoid drift.
There is one benefit benefit to having an inverter drive though, you can easily adjust the phasing while in operation. Phase control during operation is possible without an inverter, you need a variable inductor and capacitor to generate a phase shift in the motor's supply voltage.
