im working on a full bridge sstc based of steve ward's full bridge design and for the gate drive transformer i dont have any really big ferrites and was wondering if it is possible to use an E core instead from a ferrite transformer and what kind of difference it makes.

Any core shape should work for a GDT, provided it is Mn/Zn ferrite and doesn't have an air-gap. Toroids tend to be more convenient though as they encourage even spacing of the turns around the core and close proximity of the pri & sec windings.
