I picked up some IRF540A's today at Maplins to play with, but was wondering if they are suitable for a 12V Mazilli circuit.

they are 100V, 28A. One question I have is whether the freewheeling diodes are fast enough.

Looks like they should work... below the maximum RDS-On and voltage overhead looks fine ^^

And do I need to use zeners if I'm only using a 12V supply?

I think all I have in the parts bin are a couple of 15V zeners.....

You'll be safe without zeners on a 12v supply; I have tried it. However, I'd place those 15v zeners just in case one day you forget you built it without them and crank the voltage.
