When the first pot is at its max or minimum and i turn the second one the same i can draw a tiny 1/2" arc, but if turn the first one back the other way it instantly fry's.

That circuit is completely wrong. The flyback is connected directly across the DC supply and the 555 timer is grounded to the drain of the MOSFET that it drives. I would be surprised if it did anything at all the way it's drawn, so I guess you fixed these errors when you built it.
Even with these errors fixed, it's not a very good circuit. You're probably killing the 555s with spikes on its power supply. Either power it from a separate supply or use a 12V regulator before it. The best solution is to build a better circuit, like this
