You could put on two or three windings and measure the voltage output then divide by the number of turns to get the voltage per turn on the secondary. Then just divide your desired output voltage by volts/turn and you get the number of turns needed!
I doubt that the primary has exactly the number of turns as the voltage it was designed to run on.

The guy who built it for me ripped me off, he charged my £25~ and the zener's are proper crap (I had to replace them), the circuit is generally pretty flimsy and prone to short circuiting, the way it's been built.

I wouldn't say he ripped you off it worked when you got it and misuse leads to parts getting destroyed it happens. I don't think its fair to blame him for a crappy zvs unless you yourself can build better. That being said your zvs should handle 36 volts no problem provided its hooked up right whether it be a seperate supply for the gates and one for the power section or just 1 supply with the proper gate protection.

Just becuase a power supply can provide x amount of amps doesn't mean that is always the amount of current that will flow through the circuit/load you power with it.
For example I can power a 12v 0.1amp computer fan using a car battery which can supply 100's of amps when shorted yet the fan will only draw 100mA.
BTW for ZVS zeners I used these from maplins and they have worked fine.
