I don't know exactly what all the connections are, but a lot of monitor screens are controlled via SPI by a microcontroller that interprets the incoming VGA signal. In short, without the controller board, it's not possible for the average hobiest.

That is likely an LVDS cable, and they are usually a manufacturer specific implementation of the protocol.... Could be a fun fpga and dual ported vram project...
Or... An LED based Pico Projector is less than $100 on ebay, and some even have direct iPhone interface cables.

there are cheap direct VGA to LVDS converters on ebay from an unique chinese seller (no other seller has them)
I had a look to get some small 5"7 touch panel controllers, but they don't have a firmware for my TFT, but they have great controllers for LG, toshiba, dell and other TFT panels up to 13xx resolution, with audio in, tuner in, dvi in/out, etc...
