I know this should be a relatively simple question, however i hate op amps and op amps hate me, and thus they always seem to break in seemingly impossible ways. So i figured I should just ask here, can anybody recommend an op amp for me based on their experience? The reason I need them is to buffer the 180Kohm impedance signal from a gyroscope so that it can be quickly read by an adc. Its range will be pretty much 0-5v, and must run off a 5v source and ground.

/edit Just though i should add, its vital that the amplified signal is pretty much exactly the voltage im putting in, less than 0.5mv if possible

For that sort of thing there is very little difference between one op amp and another. The supply voltage will be your biggest hurdle, so you will want to find one spec'd as "rail to rail", ideally designed for a single 5V supply. Check out
How are they breaking? Op-amps are usually quite robust and simple to use.

My go-to rail-to-rail op-amps are the LMC6481/2/4 (single, dual and quad). I've built dozens of precision analog circuits with them that run off a single 5v supply. The A grade has about 0.5mV offset.
I used to use the LMC660, but it's getting pretty ancient, only available in a quad, and very probably won't meet your 0.5mV spec.
Bandwidth is 1khz, which i assume any op amp can handle with ease, and the adc requires an input impedance of less than 10Kohm, which again i thought most op amps could easily handle.
