Touch Sensor vs ESD?

So lately I've been making plans for a touch sensor. Nothing fancy, just a resistor in series with a capacitor that charges up when someone touches one end of the capacitor. I figure that if I built up a charge, I could easily destroy the uchip that is monitoring the voltage across the capacitor or the capacitor itself (I'm a bit more concerned about the chip and any other IC that I might have on its board). What kind of protection could I implement to help make my circuit more immune to ESD?
How do laptop and ipod touch pads cope with this harsh element of reality?

Google NE77 lamp, or find the GE Neon lamp manual on line.
These touch sensor were used for elevator buttons to replace the heat sensor kind that some genius invented.
Also see touch sensor lamp modules using triacs.
