I was wondering if there are any programs out there (linux or windows) that I can use primarily to analyze video clips to extract info such as bitrate (audio & video) and specifically what codecs they are encoding in, etc.

Most of the programs I have to edit/compress video dont really tell you much about the SOURCE FILE, just what format they are outputing to. I assume there isnt many standalone software programs just for analysis, so if any editing or plyaback software can do this well then let me know.

I'd recommend VirtualDubMod. I believe it's under the GPL.

It's the kind of software I like: slim, with the tools that are useful and not the ones that are gimmicky.

It's very good for analysing and converting video files.
