I would like know what is maximum voltage of homemade oil os asphalt very big capacitors without killing them. Is it possible to charge them until a few leakage is detected without destroying it or a voltage avalanche would appear (with big explosion) ?

I've made rolled caps and to my experience they show no sign before it's too late. I haven't tried to be really scientific though. I usually just test the dielectric clamped inbetween two electrodes and bring up the voltage until something happens. Then you know the volt rating of the dielectric and build accordingly.
I've not tried (nor have I seen ) asphalt in which you might be able to re-heat and restore? That would depend on construction I guess.

You must use "bitumen" (used to make asphalt). There are some kinds. I would like use them because are solid and more cheap than oil. I read about motors that it is possible to detect PD (partial discharge) by measuring using scope after a serial 500pF, but I do not know if partial discharge advises before it is too late. Try using oil between roll caps layers in order to avoid air gap.
