I use the English word Bookmaker in the gambling sense. It's an individual or organization who holds money from people betting on the outcome of a sporting (or other unpredictable) contest, then pays off the winners according to pre-arranged terms. Is the name in other languages also related to making a "book"?
Here in the USA we are a couple days away from the Super Bowl (annual championship for professional American football teams). A popular diversion in workplaces is to to join a pool where everyone starts with an equal chance of winning, but has money riding on the success of teams on the playing field.
For example, at my office it cost $10 to buy one cell in a 10 x 10 square grid. After the square is full, with $1000 in the pot, each row and column is assigned numbers from 0 to 9 in a random order. Winners are determined by the least significant digits of the Saints' and Colt's scores at the end of each period: $150 each for first and third quarters, $250 for halftime, and $450 for the end-of-game score.
The odds are uneven as soon as the row and column numbers are picked, since scores ending in 5 or 9 are much rarer than those ending in 4 or 7. (A friend analyzed the scores of all regular-season NFL games this year. I bet with more numbers, we would even see statistical differences between quarters).

In UK gambling is legalised and there seem to be as many Bookmakers around as Pubs, many more than Butchers, Greengrocers or churches. Most bets are on horse racing but one can gamble on almost anything, e.g. Will it snow on Christmas day?
Isn't gambling as you described illegal in California?
Bookmaker, Bookie, e.g. go to the bookies to place a bet.

In Iceland, we call them "veðbankar" (that's the plural form; "veðbanki" is the singular form). It basically just means "gambling banks". However, gambling with money is banned in Iceland. Now, that didn't stop all the gamblers from gambling. Instead, they just took higher ground and gambled with our entire economy. The rest is history.
