We wear radiation dosimeters "just in case". We use relatively low beam currents (10's of mA), so air ionization is not as obvious as it is with higher currents or in pulsed systems. At high beam currents, the beam is quite obvious - such as this pulsed accelerator, where the beam looks similar to a rocket engine test:

Any common glass irradiated by the beam turns a dark brown or even a black color (over time). We are going to run some quartz crystals (possibly with some lead masking) during our next run. We generally stay away from irradiating thicker glass specimens since they tend to shatter when discharged. Although most shatter immediately, those that don't are especially dangerous - they tend to unexpectedly shatter, sometimes just from the thermal stresses induced from holding one.

Is it possible to make something like that without a particle accelerator?
Maybe just a small one?
How about if you use liquid plastic and then build it up layer by layer.
So you first make a thin layer of plastic, let it cool and charge it a little. Then put a second layer on top of that, charge it some more and so on.
