I built a 2 MOT stack last night and decided to go down the unballasted road (TDU does it!). After a few minutes run time my house 20A circuit breakers go. So this to me means my mots are running at 2.5KVA (10Ax 250V) each! Is this normal for a unballasted MOT?

A standard unballasted 230V MOT will run 4-6kVA. I think it is a bit less for the 60Hz ones, but still probably 3-5kVA. The reason your breaker tripped after some time is that they have "current inertia" and will pass much higher current for short times, or slightly higher currents for long time. And I'm sure you didn't load them continuously...

If you keep a arc burning, It will trip faster even with 1 MOT. Circuit breakers work by heating, so it takes time for that to heat.
