You are bringing up the mAs, or current, by putting the secondaries in phase in parallel. It is simple addition. The voltage can't be doubled by putting the secondaries in series, though, because of the fact that NSTs have two center-tapped secondaries.

Well if you removed the center tap you could probably connect them in series, but it would quickly kill the transformers because they aren't insulated for the higher voltage. Connecting them in parallel just increases the total current output.
