I made an adjustable gap for my safety coil. get a base, use two L-brackets and two bolts with rounded heads, sand down the letter if they have some. Use a two nuts on each bolt to secure their position. Attach wires to the bolts, and adjust as needed, mount the L-bracket, bolt assemblies to the base and wallah!

If you have spent some time researching Tesla coil spark gaps, selected a particular spark gap design, tried to build it, and encountered some specific problem, then share the details, and possibly someone can offer some useful help.
What is it that you are trying to accomplish? What type of "adjustment" capability do you want, and why?
