Makes me wonder why you didn't spring for a EEE pc and mod a touchscreen into it....
One word of warning: from my experience, laptops tend to form ground loops very easily when attached to other audio equipment which is grounded. In your case it might not matter since you'll have some form of optoisolation, but just as a heads up incase your modulator is AC powered and you get odd line noise.
