I'd rather use the lithium ion cells than lithium polymer, even though you lose density, they aren't bombs.
As Conner put it 'venting with flame' will happen with lithium ion cells if you draw too much current too fast, which is pretty much the equivalent of a dead short.
and are examples of what happens with a lipo. I would expect LiIon cells to be more tame, but when you build the pack (and scrounge battery cells) be careful not to damage or short anything.
I've also seen those cordless LiPo drills at Home Depot and cringed at the thought of a unattended battery pack fire.
