Anyone recommend any freeware/shareware programs for making graphs and data plots? Just something simple were you can customize the two axis and add recorded data to be able to see trends, etc. Thanks for any suggestions.

Simply the best program for this is gnuplot (free):
Other maybe a tad simpler but less feature rich solutions are Excel and Gnumeric (free).
Both gnuplot and gnumeric should be available to pretty much any software platform.
