I have an old laptop, it works perfectly fine other than the broken hinges and short battery life. So, I'm thinking of getting a nice pelican case and mounting everything into it.
On the other hand, I also have access to a whole crap load of 20ah lipo cells(leftovers from the last solar challenge). So, the plan is to replace the 2200mah 18650 li-ion cells, with these huge lipo cells. The original pack uses the bq29311 from ti to manage and balance the cells, which is capable of working with both li-ion and lipo. And I don't really see any problem besides the low balancing current(10ma).

Is the battery back you are modifying have a micro for the charge control? If so, it might be a problem getting it to recognize it is no longer the tiny pack it once was. But that would just mean your battery level indicator will be off.
Of more immediate concern would be if the Li-Po cells can withstand the same temperature the Li-Ions can. Inside a laptop everything gets warm or hot, even it if doesn't produce heat itself. Just make sure you aren't going to end up with any adverse reactions to that environment.
Otherwise, sounds like an interesting project.
One other thing, how much did those 20Ah cells cost and where did you get them? I love batteries...

Or one could obtain the correct twin cells from an existing healthy battery off e-bay for $40-$80.
Keep the charge manager monitor, and run the linux based trick to reset the life cycle counter on the battery.
Some laptops on the recall list have extended battery warranty (HP/Sony/Acer.) If you check the OEM site there may be a support number. Some 2007 models had BIOS problems that dramatically reduces battery lifespan.
LiPol in some cases can off-gas and inflate under thermal or discharge stress (i.e. pure O2 in an aluminum plastic bag.)
