I managed to minimize the overshoot by winding trifilar magnet wire on a smaller core.
Is enameled wire ok for a GDT? I was previously always using PVC wire since I was worried that enameled wire won't stand the full mains voltage at several tens KHz..

I wouldn't recommend it. I used it for some time for driving a half bridge, and it worked for a long time, until it arced over and killed the FETs.

I saw some screened stereo audio cable and I thought it could be good for a GDT... I wound 8 turns of it on the core and voila- the problem is solved!
I used the shields in parallel as the primary and the inner conductors as secondaries.
