Hah, that's pretty neat. I think gravity would be more of a problem than the breakdown voltage of air. You can only put so much current through there to hold up the bridge before you get boiing water.

This is my HV and water topic from my site. The most interesting stuff is with deionised water which is non-conductive so charge will be held and not leak away. You can make interesting columns of non-flowing water.
I haven't tried the water bridge stuff though. I was in the process of cleaning a titanium electrode to put in the water which will be less likely to ionise than say copper. De-ionised water becomes conductive after a minute or so in use.
