The Basic Stamp Industrial Control package is what I am recommending.
Why would I recommend it if its so expensive?
The book and situation fit perfectly for your need. The book sets you up to design a hatchery oven controller using a PID, fan, and setpoints.
So you can do this with any controller? Well not really. Sure you could implement a control in any chip, but there is a problem that you overlook if you haven't done this before, which is the kiln. The kiln like any heating element has thermal inertia which must be characterized for its transfer function to be optimized in the PID. This cannot be overlooked or else you absolutely will have thermal overshoots and undershoots.
The kit sets you up to do the analysis of the thermal inertia of the system and has datalogging which communicates back to the computer for a plot of the output. From the plotting of the function you begin the process of getting your transfer function and from there you can go to MatLab to optimize your PID variables for the heating algorithm.
If you buy a chip and make your own programmer you won't have some of the things you need: Procedure and Software. That's what you're really paying for.
So cheaper isn't always better, and it does get complicated.
