Why? You have all the information.

To summarise ...

Assuming star and delta are wound for the same terminal voltages, they will deliver the same output current and voltage through a 6 rectifier 3 phase bridge with the same ripple.

Whether you have fewer turns of heavier wire for your star windings, or more turns of lighter wire at lower winding current for your delta windings, is a matter for you, your junk-box of wire you might have, and what's available in your favourite on-line catalogue. The choice may be made completely irrelevant if you choose to get the cross section by using multi-filar thin wires, as they are easier to handle and may be easier to get than a single thick wire. Neither will offer any difference in system performance (to first order, there are plenty of second order terms like integer turns, packing density etc which have negligible impact at the system level).

However, star windings give you more flexibility in that you can ground the centre tap. At the low voltages you are talking about, it doesn't really matter whether you run control electronics from the full differential output voltage, or from a single phase and centre tap. You can even safety-ground the -ve terminal, as you have isolation through the transformer. At higher voltages, that convenience of star might have more weight.

The important thing is to recognise is that if you don't need the star point, there is no *fundamental* difference, pick one, and do the sums right.
