switching 120vac on/off

You can purchase a DIN mount integlligent relay (basically a compact PLC) that uses ladder logic for less than $100 bucks. These usually have 4-8 inputs, and 4 relay outputs rated up to 240VAC or so. They also have an integrated LCD display on the top.

If I'm just switching a valve solenoid on/off every 60 seconds, do I need an optocoupler for a triac, or can I hit the gate directly from the output of an Arduino?

I believe you may be able to hit it directly, but it's really, seriously, best not to. One of the failure modes of TRIACs connects the live to the gate, and then your arduino, at best will blow up, at worst, it will electrocute you.

So you should always use an optoisolator, and take good care with the physical layout, and probably stick the triac in a different, well earthed, box to the arduino.

You can get low power opto-isolated triacs which are used to drive a second power triac; they're dirt cheap. MOC302<x> range.
