Like many things, at first glance it seems daunting, but I think if you break it down into a series of smaller, simpler problems, and then attak them one at a time, it's entirely possible.

In fact I'm working on something similar myself.

Anyway, for a cathode, people have used a brass rod, or an aluminum rod, or a graphite rod, or a piece of velvet, or carbon nanotubes (embedded in epoxy or something), etc. Almost anything will emit electrons "explosively", if subject to a high enough electric field.

I think you could just use, say, a 1/2" diameter graphite rod.

If you want to do something innovative, you could maybe try to mix a small quantity of commercially available carbon nanotubes with some ceramic potting compound from Cotronics, for example. (Depending on the field, nanotubes will work in either a field-emission mode or an explosive emission mode).

It doesn't have to be very sophisticated.

BTW here's an example of a very small pulsed accelerator that apparently uses carbon nanotubes in an explosive emission mode:
