About the only thing that wears out on those are the carbon brushes. I rebuilt mine with some brushes I got cheap on ebay, filed them down to fit.

I'm sure I once seen a circuit that was designed to skip whole cycles i.e. 1 cycle in 2, or 1 cycle in 3 etc, rather than the usual phase angle control. I don't know if that would work any better.
It is difficult to control the speed of a single phase induction motor as the torque will be poor at slow speeds, and it will want to catch up to near its synchronous speed with light load. You can try a variac if you have one to confirm this, I can’t see it will do any harm unless you keep it stalled with voltage applied.
The drive looks to be 1:1 without much option to change the pulley size easily, you might be able to find motors that have a reduction gearbox attached to them if you’re only going to use just the one slower speed.
