As for the voltage rating for the mosfet, it needs to be around 3.3 times the input voltage. Also, since you are running with the flyback topology, the polarity of the primary does matter.
For less heat, you should add a shunt capacitor across the mosfet. You don't need to run perfect class E or anything, but even if the capacitance is not ideal it will at least be better than nothing. Just put a film capacitor across the mosfet. Dr Kv used .22uf and his results where excellent.

the fan is 12v already and it is actually a really good heatsink so I think I will just parrallel a few FETs together, is there any limitiations that I should be aware of when I do this? I will look for some with a higher current rating as well

I put a .22 across the drain and source but it just diminished my arc a little and did not help with heat
EDIT: would I be able to push 50+ volts DC through the flyback without the FET getting hot if I got a 50A, maybe 200v FET?
