Just to clear up a couple things. The panel in your house has two 120vac hot legs coming into it. A and B which are 180 degrees out of phase. Using circuit A and B will give you 240vac. This is what most ranges or dryers run on. The panel is typically laid out so if you snap in breakers only down one side of the panel the loads are split between A and B (every other breaker clips onto a different leg). The neutral line is grounded in the panel and at the pole outside. Pretty much the ground wire in a home is a safety backup in case the neutral line becomes broken. When you are pulling 240 from your panel you need to use a two pole breaker that has the levers or handles tied together (very important, already covered previously about backfeeding). If you do this, the breakers two poles will be on A and on B by default. Then all you need is the neutral line for your return. The ground wire is used as an "equipment ground" usually grounding the metal parts of the driven load. So 240 is available to you. As an electrician i do not recommend playing around in your service panel, but if you do,,,,,,, use extreme caution and make sure you know exactly what you are doing. Whenever you are changing or adding a breaker shut off the main before even removing the panelboards cover.
