I'm still not clear about your aims. Do you
a) Want to learn programming (on anything, but perhaps starting with a computer with an OS, perhaps so that you'll have a less steep learning curve when you come to program anything else)
b) Want to use a microcontroller (which happens to needs programming)
The answer will critically affect what advice you're given

@HighVoltageChick Generally, I recommend this book for undergraduates:
Learning about gcc C will prepare you for just about any language, and to write platform independent code.
