He turns on, this morning, much to my happiness; (there's streaks under the screen...?)
But the backlight, music, touch ability all works.
The only thing that doesn't; The wi-fi. (in settings, where the wi-fi selection is, it says "No Wi-Fi")
Is that a normal failure to happen? Or, do you think I should wait a couple of days to see if it possibly fixes itself?
i Had someone spill water on my cheap LG phone, after a week it was sortof working like normal, but an iTouch has way more features, therefore more prone to not recovering, wifi chips and traces are sensitive. So, your best bet is to take it apart (if you dare) or seeing as how its gen1 just visit the Ebay and get yourself a gen 2, 3 or whatever, on the cheap .

the streaks under the screen are probably water streaks, you should really leave the thing off for a week and then try it. I'm not sure on the wifi but if it doesn't bounce back you may be able to replace the wifi assembly inside the phone.
EDIT: They are pretty easy to take apart (youtube disassembly videos are your friend) as long as you have the right tools. I replace broken screens for a living.

well theres the rice bag trick, then theres the flower silica you can buy from michaels or craft stores, they sell large containers of the desicant you find in pill bottles, for desicating flowers i presume. Not sure if the cost is worth it though.

The usual way of drying electronics is:
Take unit apart and remove all batteries as soon as possible. If they're left in, electrolysis will soon eat through thin PCB traces, causing permanent damage. Don't forget to remove the backup battery if fitted.
Wash the circuitry in distilled water or isopropyl alcohol. It is OK to let it soak for a while. Both pure water and IPA are non-conductive, we are trying to wash away the conductive impurities in whatever the unit originally got dunked in. Bob Pease recommended putting stubborn boards in the dishwasher, but I wouldn't go that far!
Leave to dry in a warm area for a good bit of time (about a day) then reconnect the batteries and try your luck.
A bag of rice seems delightfully random. OK, I know it is not easy to take apart an iTouch and get the batteries out, but it really is important.
