Rocket propellants and high explosives, Ammonium perchlorate, HMX, Semtex, Mercury Perfulminate and what not.
And one of the best experiments I ran at shasta college was to demonstrate a "oscillating reaction" it was super concetrated sulfuric acid, and a boat load of other chemistry, and every 10 seconds the erlynmeyer flask would change to a different color. It was 3 liters if I remember right.

I like trimethylborate, I got a model of it somewhere, it burns with a nice green color.
One of the few nice chemistry experiments thats still legal in my country. Very simple demonstration to perform too, you should look it up. Its not particularly dramatic like Patrick's stuff but its very pretty to look at.
