My inverter seems to have killed the flyback. Also, it seems like I need a better core (and maybe a transformer without a diode) because this one seems to be saturating (the circuit pulls 25A at its peak).

Update: I got a transformer from a microwave and I used it. Now it works much better. I can only run it off 50VAC because if I go any higher, it arcs over the safety gap (this thing is only designed for 2kV) and it spits steel sparks all over the place.

in my experience external secondaries are undesirable and the cylinder type flybacks seem to do poorly, presumably the diode as you said.

Why would anyone pull an arc off a flyback inverter
with poor leakage inductance
all the arc energy is reflected back into the primary driver with excessive voltage transients (caused by the leakage inductance).
Arcs cause high dV/dt and high dI\dt both very destructive to solid state electronics
