What to "cook" with Liquid Nitrogen?

In a few weeks we will do fun demonstrations as a side show of a science convention for kids. This year I will perfom some cooking, which will include some MOT Plasma streams and stuff like that.
But also, we will have a large dewar container with a couple gallons of Liquid Nitrogen. There will be the usuall stuff like shattered roses, hammering a nail in with a frozen Banana and so on. What I want to do is some basic molecular cooking, like cryopoached meringue and super fast ice cream.
So I guess my question is, does anyone of you guys know some entertaining food stuff we could do with this? What would you like/exspect to see in such a show?

'instant' ice cream for the kids to enjoy, (google gives plenty hits)
just remember that 1 litre of liquid N2 goes to about 700 litres of gas
so asphyxiation is a risk ...

Yeah, ice cream will be a must.
Thanks for the reminder, we just worked out a way to store and acces the dewar for the days before the convention.
Anything suggestions what to do with LN2? Doesn't has to be only about cooking, what things would you like to see frozen?

The two cryo demonstrations that have stuck in my mind are
freezing the end of a rubber tube, then seeing it shatter when whacked on a bench
and
levitation using neodymium magnet(s) and superconductor.
After demonstrating the effects of extreme cold, pouring liquid N2 over your hand
(no jewelery, cloth etc.) and suffering no damage is ming-boggling.
There is even a YouTube video of someone plunging their hand into LN2 !
even when you know the theory, I'd be scared of the practice!

The rubber tubing demo is quite effective.
Just remember that when you put the tube in the liquid a spray of drops of liquid nitrogen comes out of the top. Make sure it's not pointed at anything important (like your face).

Change the color of an LED by submerging it.
Though mild quantum physics may not be an intuitive demonstration, its still neat, imo.

The nice thing is that with my liquid nitrogen generator I can make the stuff whenever I want. I'll have to see if you come up with anything really creative for me to try.
