Ok ive got some questions and some pics.

first i dont know what gasket material i should use. I have : Link2

+ cork-rubber -- for oil, coolant, gasoline
+ Rubber-cellulose -- for water, coolant
+ Rubber-fiber -- for oil, coolant, gasoline

vacuum gasket you want neoprene or silicone or some other elastomer sheet.

I think the best choice is some elastomeric, non porous gasket. So silicone or rubber is a good choice.
I would also be carful with the connection of the acrylic plated. If you plan to srew theese togher then use a lot of smaller screws. Otherwise the acrylic might crack when you pull a vacuum. Also a small notch milled in the acrylic could precent the plates from beeing pulled inward.

You could also use some liquid gasket like Hylomar.
I have used it in combination with an oring in the attached picture of the housing for a ferrite transformer.
The housing can also withstand a full vacuum in order to degas the transformer and oil.

I don't know what pressure is going to be used but it might be a better idea to go with a round tube and have two strong end caps. You could hold them in place using stud bar on the outside.
One thing to look out for with acrylic is micro cracking, some cleaning chemicals like IPA will attack it. If you are just de gassing stuff I would think any of your sheets will work but some may require more pressure to make a good seal so just go for the softest one.
