My reasoning is that XFMR2/3's secondaries can be treated as open circuit (approximately) - as the primary side is open circuit, so you don't need to open the transformer up and disconnect them. Does that make sense?
The rated capacity for normal use is 50kVA. Is dividing that / 3 to get 16.67kVA single phase capacity reasonable?

I am in the same boat with my project. I am going to try and run off a VFD, it should work.
I think you are going to have to rewire the secondary, you are going to have current running though the other windings.
If you have access to the primaries and secondaries you should be able to put all the sections in parallel. You dont need to derate then. The output is a matter of the size of the wire in the windings and the core dimensions. You could still get the 50kva out if you could actually supply that much power to it.
