Can anyone tell me what the correlation between the voltage of the capacitors in a coil gun and the muzzle velocity is??

That depends on the cap bank capacitance, efficiency, etc.

By looking at the formulas you should see that the energy stored in the capacitor rises with the square of the voltage. So with a constant efficiency you would put four times the energy into the projectile if you double the voltage.

Now you have to look up how much faster the projectile will go if you quadruple the energy.

That is under ideal conditions, reality is infinitely more complex.

Sounds like a homework problem, or a lab problem.

Bjorn's post gives you a good starting point, with the stated assumption of constant efficiency.

In reality the efficiency varies. The current pulse amplitude changes in proportion to initial voltage, but its timing stays the same. The projectile timing varies as you change its acceleration; that might improve or degrade its matching to the current pulse.

Bottom line: the graph you requested, even its general shape, depends on the coilgun design. If you are good with modeling and simulation, that might be the fastest way to an answer. If not, you'll have to build the coilgun and measure it.
